Go behind the bar. Learn the craft of mixology through intimate, hands-on workshops led by our visiting international guest bartenders and the Lair team.

Our Cocktail Coalition series goes beyond just serving drinks; it's about sharing knowledge. Here, we announced our debut workshop with Zest from Seoul, titled "From Seed to Husk," focusing on minimal waste and maximum flavour. This seminar allowed our local bar community to learn directly from one of the world's most innovative teams.

This poster details the "Modernising Classics" workshop we held with FOCO from Barcelona. The session was an opportunity for local bartenders and enthusiasts to learn how to transform familiar cocktails through format, texture, and unexpected Indian flavours, directly from masters of the craft.

A key part of our collaboration with Zest was this seminar on their "minimal waste, maximum yield" philosophy. Sean and Noah, co-founders of Zest, shared the processes behind their sustainable menu creation, offering invaluable insights to the Delhi bar community.

During Negroni Week, we see an opportunity to educate and inspire. This video serves as a mini-masterclass, where our bartenders explain the importance of balance, temperature, and quality ingredients in creating the perfect Negroni. It's a glimpse into the technical craft and philosophy we practice daily.

About Workshops & Knowledge Sharing

These are not dry, theoretical lectures. Before we host a workshop, we take our guest bartenders to Old Delhi’s spice markets to hunt for wild, local ingredients. You get to see that sourcing process—from the market stall to the rotovap distillation—so when we talk about minimal waste and flavour extraction, you are seeing exactly how it works in a real, high-volume environment.
