We partner with the world’s most pioneering bars to co-create one-night-only menus, blending their global techniques with rare, locally sourced ingredients from Delhi’s markets.
Announcing the very first chapter of our Cocktail Coalition series, a concept we co-created to foster deeper, more meaningful collaborations. For our debut, we hosted Zest from Seoul to develop a sustainable menu using locally sourced ingredients, setting the stage for a new kind of guest shift experience in India.
Our collaboration with FURA from Singapore was a deep dive into sustainability. We worked side-by-side to create a menu that mindfully rebalanced the ecosystem, sourcing ingredients ethically from Delhi's markets. The result was a night where conscious mixology transformed into delicious, unforgettable cocktails.
About Cocktail Coalition: Our Signature Collaboration Series
The beauty of the Coalition is the friction. It is not just a guest shift where a bartender pours from a pre-made menu. We bring these teams into our space, take them through the spice markets of Old Delhi, and work side-by-side to build a drink list that did not exist until that week. You are tasting a cross-cultural experiment where the technical mastery of Seoul or London meets the soul of our city.
The Process
It starts with the hunt. When teams from bars like Zest or FURA arrive, we do not head straight to the back bar. We hit the local produce markets. Our mission is to see how their technical mastery—rotovap distillations, sous-vide clarifications—reacts to ingredients they have never touched before, such as specific Indian botanicals or market-fresh spices.
The Workshop Element
These events are layered. We hold 60-minute masterclasses before service where these visiting experts break down the ‘why’ behind their process. It is a chance for local enthusiasts to learn about sustainability, fermentation, and the realities of running a globally recognized bar. We believe that sharing these skills strengthens the entire community.
The Experience
Once service starts at 8 PM, the bar becomes a high-energy workshop. You will find the guest bartenders behind our counter, serving 4-5 exclusive creations. These are fleeting, limited-edition menus that will never be served again. We focus on low-waste, high-flavor profiles that challenge what a cocktail can be in India, served over custom clear block ice in our Vasant Vihar space.
Lair
We treat the bar as a modern den for exploration. My team and I believe that the best drinks happen when you stop treating mixology as a static recipe and start treating it as a conversation between two different cultures.
