About Deliciously Simple: Fruit & Chocolate Cakes
You might worry about a tall, cream-heavy cake surviving the Mumbai commute, but I build these to travel. I use thick, 10mm MDF boards and tall display boxes, so whether you are picking it up in an auto or having it delivered, your cake arrives exactly as I frosted it. It is simple, practical, and most importantly, it holds up.
I believe that sometimes you do not need a complex theme to make a statement. You just need a damn good cake. This collection is about the fundamentals done right.
For my chocolate cakes, I skip the mass-market compound and use premium couverture chocolate for that deep, rich ganache finish that actually tastes like chocolate, not just sugar. For the fruit cakes, I only work with what is in season. If it is mango season, you are getting fresh Alphonso, not artificial essence.
These are my go-to cakes for casual birthdays, office celebrations, or just a weekend craving. They are 100% eggless, but I get asked all the time if they are really vegetarian because the sponge remains moist and light.
