About this collection
We start with a 55% Belgian dark chocolate base because it has the right bitterness to hold its own against intense spices. Instead of using artificial extracts, we dry our own fruits and grind whole spices to ensure that when you bite into a piece, you get the actual texture and raw aroma of the ingredients rather than a synthetic aftertaste.
How We Make Our Chocolates
Our process is slow by design. We treat chocolate making like we treat our pickles, with patience and small batches. Every slab is tempered to maintain a crisp snap, which is crucial when you are dealing with inclusions like Kashmiri chilli or pink salt. We focus on balancing the deep, earthy cocoa notes of Belgian chocolate with ingredients that bring out a specific memory or feeling, much like our traditional recipes.
The Flavour Profiles
We wanted to move beyond standard fruit fillings. Our Mango Black Pepper bar pairs the sweetness of sun-dried mangoes with the sharp, woody heat of freshly cracked pepper. If you prefer something zingier, the Cranberry Kashmiri Chilli is a favourite for its subtle, warming spice that hits the back of the throat after the initial sweetness fades. We also offer options like Orange Rock Salt and Strawberry Pink Salt, where the mineral hit of the salt elevates the fruit notes.
