People often dismiss Paneer Tikka as a basic side dish, but I believe it deserves its own spotlight. My Multani Stuffed Paneer Tikka uses a tangy raw mango and mint chutney filling, giving it a vibrant kick and texture that standard versions lack.
For the last decade, I have catered over 5000 events across Delhi NCR, and if there is one thing I have learned, it is that guests do not remember the centerpieces, they remember the taste. My approach to this featured selection is simple: take the familiar and perfect it.
Take my Nalli Nihari 2.0. Traditional recipes are often heavy on oil and rogan, which can feel overwhelming at a wedding. I refine the process, using only lamb shanks slow-cooked for 8 hours to extract deep, clean flavour without the excess grease. It is the same royal experience, just modernised for the palate of today’s wedding guest.
We apply this same logic to our live stations. Why serve pre-plated chaat when you can have a live counter making Edamame Falafel or Golgappa shots? The Halwa Factory is another favourite. Watching Mirch ka Halwa or Paneer Jalebi being prepared in front of your guests adds theatre to the dessert course.
