That Saturday vs Monday scale jump is not fat gain, it is just life. Whether it is water retention from a weekend meal or simple hormonal shifts, your body fluctuates naturally. If you have a festive meal or a weekend of travel, you do not need to restart your diet on Monday. You simply return to your routine.
