The tender bamboo shoots require careful preparation, soaking in salted water for days to ferment naturally and remove toxins. This process is the only way to get that authentic, sharp flavor that defines the monsoon season for us in Coorg.
Authentic Kodava cuisine is rooted in patience. When I cook Mudaré Kanni or our traditional bamboo shoot curries, I am not following a standard recipe. I am relying on the slow-cooking methods I learned while watching the older generation in our kitchen.
The Monsoon Kitchen
Our seasonal menu changes with the weather, just like it does back home at our Uttam Sagar Estate.
- Baimbalé Kanni: This is our signature monsoon curry. Because bamboo shoots are only available during the rains, this dish is a fleeting pleasure. It pairs perfectly with fresh Akki Otti (rice roti).
- Mudaré Kanni: We slow-cook this horsegram sauce for two days. It is heavy, smoky, and deeply comforting, especially when you need a meal that feels like home.
