It's about the dense, fruit-spiced crumb of a traditional English Simnel Cake or the rich, honest ganache on my chocolate cupcakes. When I started making the English Simnel Cake, I wanted to get the ratio of dried fruits, warming spices, and that signature toasted almond marzipan layer exactly right. What is in the marzipan?
