Because these are small-batch, I control every step, from the temperature of the ganache to the final packaging. If you are planning a gift, I use rigid hard-board boxes with individual separators. This is not just for looks, as it keeps the truffles from bumping into each other so the ganache stays protected and the chocolate coating does not crack.
