How I Build the Flavor

• The Kahlua Chocolate Cake: This is my signature. I use a dark chocolate sponge that acts like a sponge, absorbing the coffee liqueur. I pair this with a 2:1 dark chocolate ganache, which balances the sharpness of the Kahlua. It is rich, dense, and meant to be enjoyed in small, decadent slices.
• The Old Monk Fruit Cake: This is a seasonal favorite, especially around the holidays. The fruit and nut mix is soaked in Old Monk rum for weeks. Once baked, the cake is moist and aromatic. I often finish it with a drizzle of homemade caramel to add a layer of sweetness that cuts through the deep, spiced notes of the rum.

Whether it is an anniversary, a milestone birthday, or a quiet get-together at home, these cakes are designed for adults who appreciate a deeper flavor profile.

• No Fondant: My focus is on the taste and the texture. You will find rustic finishes, chocolate shards, and gold leaf rather than heavy fondant or bright, artificial colors.
• Freshness: Everything is baked to order in my Mumbai kitchen. I do not use mixes or preservatives, which is why I strictly adhere to the 48-hour notice period. It ensures the cake is at its peak when you cut into it.
