About A Look Back: Past Creations
One detail you will notice across these photos is my reliance on Italian Meringue Buttercream. While fondant is often the go-to for complex themes, I prioritize IMBC because it’s lighter, significantly less sweet, and allows me to create the crisp, sharp edges that give my cakes their signature look. It is what I use for everything from my semi-naked rustic cakes to those intricate, stenciled patterns.
Looking back at these past creations, I see a journey of trial, error, and a whole lot of sugar. When I first started Renaé Patisserie, I used to struggle with intricate fondant work, but today, I have found a balance that lets me embrace the best of both worlds. Whether it's a Naruto ramen bowl for a birthday or a sophisticated floral tier for a wedding in Indiranagar, my goal is always the same: make it taste like a proper dessert, not just a showpiece.
My process starts with your vision. You might have a Pinterest board full of inspiration, but my job is to translate that into a reality that actually works with our Bengaluru climate. Since I work primarily out of my kitchen in Domlur, I am very particular about structural integrity. For larger tiered cakes, I use internal food-safe doweling and support boards to ensure your cake survives the drive to your venue without shifting or melting.
I love the challenge of 'wild' themes. If you have an inside joke or a niche fandom, bring it on. I have done everything from ruffled gowns to themed bachelorette cakes. If you are worried about the 'look versus taste' dilemma, rest assured that my cakes rely on premium sponges like Chocolate Hazelnut or Vanilla Coconut. Everything is prepared fresh 24 to 48 hours before your event to ensure the texture is spot on when you take that first bite.
