About The Berliner Collection
I start the dough before sunrise because there is no shortcut to that perfect, airy texture. When you bite into one, you should see that classic golden band around the middle and a filling that actually reaches the edges, not just a dollop on top. We serve these fresh throughout the day at our Nerul cafe, and honestly, they move fast.
Making a real Berliner is about patience, not speed. I use a higher gluten flour to get that perfect stretch and keep a strict eye on the oil temperature so the outside gets golden without making the inside greasy. It is a balancing act of science and feel that I have refined over the last three years.
Whether you are a custard purist or want to try our rotating specials, there is always something new. We do the classics like rich chocolate and smooth vanilla custard, but the fun starts with our seasonal experiments. During winter, we do fresh strawberry-filled Berliners, and if you catch the Raspberry Cheesecake special on the counter, grab it immediately.
