About Breads & Accompaniments
Let us be honest, a rich curry is only as good as what you scoop it with. My Rumali Rotis are rolled thin and cooked fast so they stay soft, pliable, and light, never chewy. When you dip that fresh, warm bread into a piping hot mutton gravy, that is when you really taste the zaayka.
It is not just about the meat. You can have the most expensive, flavor-packed curry on the table, but if your bread is hard or your raita is watery, the whole experience falls flat. In my catering setups across Bengaluru, I pay as much attention to the sides as I do to the main degh.
The Bread Philosophy
I believe in fresh, on-site preparation. My Rumali Rotis are prepared right there at the venue, not brought in cold from a kitchen hours ago. They are designed to be thin enough to fold and strong enough to hold a thick Hyderabadi salan or butter chicken without breaking.
Why the Accompaniments Matter
My accompaniments are not just fillers. They are flavor correctors:
- Onion Raita: My raita is prepared with fresh curd, not the watery stuff you find at some places. It is intended to cut through the heat of the wood-fire biryani and heavy gravies.
- Bagara Baingan: This is my signature side. The tanginess of the brinjal curry pairs perfectly with the spice of the mutton, creating a balance that keeps your guests going back for more.
