When you choose our slow-cooked menu, you aren't just getting food; you are getting the exact technique we have used since 1996. We insist on using soudhe ole (wood-fire stoves) for our biryani and curries because the heat distribution creates a smoky depth that gas burners simply cannot replicate. It takes longer to set up at the venue, but it ensures that the spices and meats meld perfectly, creating the rich, traditional profile our regulars expect.
Why Wood Fire Matters
Most catering today relies on gas burners for speed, but that method misses the essence of a true Karnataka feast. When we cook on a wood fire, the temperature control is different. It requires constant attention, which is why I am personally present at every event we cater. This slow, steady heat is what makes our Mutton Biryani grains separate yet flavourful and keeps our Naati Koli Saaru (chicken curry) consistent in taste.
Consistency Through Tradition
I have the same team of cooks working with me for 30 years. In an industry where staff turnover is high, we keep our cooks because the 'ruchi' (taste) depends on it. They know exactly how much masala to add and how long to leave the vessels on the fire. We do not use premade gravies or store-bought masalas. Everything is ground fresh, just as we have done since 1996.
