When I work with buttercream, I focus on building texture—whether that is through palette knife strokes or delicate wafer paper—to create a look that feels distinct from standard piping. My process centers on using a high-quality base, such as Belgian chocolate or fresh seasonal fruit, to ensure the taste matches the visual style.

My approach to modern buttercream art is about moving beyond traditional methods to create something that feels personal to your event. I use techniques like palette knife painting to mimic floral art and textured brushstrokes to add depth, which allows me to play with light and shadow directly on the frosting.

The Ingredients Matter

Great design is nothing without the right base. Every cake I make uses premium Callebaut Belgian chocolate and fresh, seasonal fruit. I do not use compound chocolates or tinned produce, because you can taste the difference in the mousse and ganache.
