A glimpse into how we reimagine Indian flavours through progressive mixology and precise wine pairings.

We believe in the perfect partnership between plate and glass. Here, a rich lamb shikampuri filled with boursin and wrapped in crisp urad dal kataifi is paired with a Mourvèdre-Viognier from South Africa. The wine's supple fruit notes beautifully complement the spice and texture of the dish.

This is the art of crafting The Picante. We carefully combine the smooth elegance of tequila with the bright kick of fresh chilli and lime. The process is a study in precision, resulting in a cocktail that is both spirited and perfectly balanced.

We present our Kulfi cocktail, a nostalgic dessert reimagined as a sophisticated drink. This milk-clarified creation captures the essence of traditional kulfi, blending gin with the aromatic warmth of cardamom, saffron, and almond for a truly unique experience.

We are honored to receive the Wine Spectator’s Award of Excellence. This recognition is a testament to our commitment to building an exceptional wine program that thoughtfully pairs with the nuances of inventive Indian cuisine, guided by our Head of Wines, Kevin Ken Rodrigues.

Our Inverted Marigold Sour is a celebration of floral flavors. We use sous vide marigold vodka, fresh lime juice, and a delicate marigold syrup, topped with golden cadillac foam. The result is a bright, aromatic, and visually stunning cocktail.

Our cocktail menu offers a journey through four distinct moods. This collection features diverse flavor profiles, from the crisp Green Apple & Elderflower to the spicy Mango Chilli, the tropical Coconut & Pandan, and the herbaceous Guava & Basil, showcasing our creative range.

We are incredibly proud of our Bar Manager, Ravi Rai, for reaching the finals of World Class, the world's most prestigious bartender competition. This video captures his passion and skill, which are at the heart of the innovation you see at our bar every day.

Our bar program relies on precise techniques like milk clarification and sous-vide extractions to turn nostalgic flavours into a fluid experience. Whether it is a clarified kulfi cocktail designed to mirror a childhood dessert or a South African blend selected specifically to cut through the richness of our lamb shikampuri, every drink is built to match the profile of the plate.

The Inverted Marigold Sour uses sous-vide marigold vodka to create a bright, floral experience, while our kulfi cocktail takes the comforting notes of cardamom and saffron and clarifies them into a sophisticated, crystal-clear pour.
