I don't use heavy fondant because a cake should taste as good as it looks. My focus is on light, airy whipped cream and scratch-made sponges, even for complex structures like my LED display cakes or floating designs. When you order, we chat about the flavour profile and the engineering behind the structure to ensure it travels safely across Mumbai.
My Approach to Custom Baking
When you see these designs, you are seeing my favourite projects. I believe a cake is more than just sugar and flour; it is the centerpiece of your event. Because I run a Jain cloud kitchen, I am obsessive about 'shuddhata'—purity. You will never find premixes in my kitchen. I bake every sponge from scratch using high-quality ingredients, ensuring the taste is as memorable as the design.
Engineering Your Dream Cake
Many clients come to me with a photo from Pinterest, asking, "Can you do this?" Whether it is a floating, levitating cake, an LED-scrolling message, or a train that actually moves through the cake base, my answer is almost always yes. These designs require specific structural planning. I use internal armatures and food-safe mechanics to make sure the cake stays stable while looking effortless.
The Importance of Freshness
I prefer whipped cream over fondant. Fondant can be sweet and heavy, whereas whipped cream keeps the cake light, fresh, and airy. I use fondant only for small accents or 2D cutouts to maintain the theme without compromising on taste.
How We Get It to You
Living in Mumbai, I know the roads can be tough on a delicate cake. This is why I do not trust standard delivery couriers. Every custom cake is delivered in an AC cab. This keeps the whipped cream stable and prevents the cake from melting in the Mumbai heat, so it arrives at your venue looking exactly the way it did when I finished piping the final rosette.
