When I cook Indian classics, the biggest challenge is getting that authentic flavour hit without the oil floating on top. Instead of deep-frying or using excess fats, I use a slow-roasted base of onions, tomatoes, and fresh ginger-garlic to build that rich, thick texture you expect from a proper gravy.
