I believe a cake should be as good to eat as it is to look at. My kitchen is entirely eggless, which means I have mastered the science of structure and moisture without relying on eggs. My sponge bases—ranging from classic vanilla bean to whole wheat and rich Belgian chocolate—are designed to hold up under the weight of premium toppings without becoming dry.

I source my ingredients with the same care I would for my own family. When mangoes are in season, you will find chunks of fresh, sweet Alphonso in my fillings.
