Why these are special

I call these my 'Bombe à gâteau.' I wanted to create something that wasn't just a heavy slice of cake, but a small, intense chocolate experience. The magic is in the ratio—lots of ganache mixed into the cake crumbs so it almost melts when you bite into it. Because I use dark chocolate for the outer shell, it isn't overly sweet, which is why even people who say they don't like dessert often find themselves finishing the whole box.

They taste best at room temperature, but if you like a firmer snap from the chocolate shell, keep them in the fridge.
