My version of the classic Kolkata-style Chilli Chicken. Every Bengali household has its own recipe for this Tangra-inspired dish, and this one is ours, perfect with noodles or rotis.
Narkol diye Ghugni, a yellow pea curry with coconut, ready to be packed for patrons. This snack reminds me of the 'melas' (fairs) in Calcutta, where it's enjoyed with toasted bread.
Deemer Kawsha, or spicy egg curry, inspired by the street-side stalls at fairs in Bengal. I was never allowed to eat it as a child, so now I make my own hygienic and delicious version.
Maangsher Ghugni, a robust snack where the classic yellow pea curry is enriched with minced mutton. It's a taste of the Kolkata Book Fair and other winter festivals, made right here in my kitchen.

Because I don't use preservatives or commercial shortcuts, I need a little advance notice—especially for bulk quantities—so I can source the freshest ingredients and slow-cook the gravies to get that authentic street-style depth.
I remember the street-side stalls at Calcutta fairs—the smell of frying spices, the hustle, and the way everything tasted better outdoors. But as a kid, I was always told pet kharap hobe (it will upset your stomach) by my father. That is exactly why I started making these classics at home.
My version of Kolkata-style Chilli Chicken is inspired by the Tangra-style preparation—bold, spicy, and perfect with rotis or noodles. Similarly, my Ghugni is a robust yellow pea curry that I like to dress up with fresh onions, chillies, and coriander, just like the vendors at the Kolkata Book Fair. For those who want something heartier, I even add minced mutton to the mix.
