When designing a grazing table or a live station, I prioritize how the food facilitates conversation. A well-placed chaat counter or a sprawling cheese board acts as a focal point, encouraging guests to move around and mingle. If you are balancing a menu, I suggest mixing heavy live-grill items for heartier appetites with lighter, visually striking appetizers to keep the energy social and relaxed.
Every event has a different energy. My work focuses on matching that mood with the right food setup. For intimate gatherings or pre-wedding functions, I lean into the nostalgia of street food with a modern twist. Think of kulhad chole chawal or mini chaat portions served in shot glasses. These serve as great conversation starters.
When it comes to larger corporate events or sophisticated soirées, the visual appeal of a grazing table becomes essential. I curate these using a mix of artisanal cheeses, fresh breads, and seasonal produce, styling them with florals to ensure the table looks as good as it tastes.
