When planning an enchanted cake, the magic is in the details, but stability is the foundation. For complex designs like my Rapunzel or Frozen cakes, I use chocolate ganache sealing under the fondant to keep everything sharp and sturdy, even in Bangalore’s humidity. You don't have to worry about how the structure holds up—I handle the internal engineering for every sculpted piece or multi-tier setup.
Whether you want a princess castle, a forest of fondant flowers, or a classic character brought to life, my goal is to make the cake the heart of the party.
How I Build Your Dream Cake
Every enchanted cake starts with a design discussion. For themes like Barbie or Frozen, I recommend going with a semi-fondant or fully sculpted finish. This allows for those sharp edges, 3D character figurines, and smooth gradients that define the magical aesthetic. I bake with denser sponge bases (like Mud Cake or Red Velvet) for these designs because they handle the weight of sugar art much better than a light airy sponge.
Practical Details
- Flavor & Filling: Even with complex designs, the cake inside stays delicious. I stick to standard crowd-pleasers like Chocolate Truffle or Butterscotch unless you request otherwise.
- Structural Engineering: If you are looking at a tiered cake, I use food-safe dowels and separator plates to keep things upright.
- Custom Figurines: I hand-sculpt these characters days in advance so they set properly. If you have a specific character in mind that you don't see here, share a photo, and I will let you know how we can recreate it in sugar.
Since these designs involve extensive manual work—from airbrushing gradients to sculpting butterflies—they are pre-order only. I suggest reaching out at least a week in advance so I have enough time to prep the sugar art properly.
