Step inside our sunlit glasshouse, where chefs from across the globe take the stage. From intimate tasting menus to casual pop-ups, every plate is a story waiting to be tasted.

I love moments like this, when the kitchen becomes a stage. Here, Chef Viraf Patel from 'Across' brings Himalayan traditions to life, with steam and stories rising from the pass during one of our curated dining experiences.

This is the Breakfast Doughnut 2.0 from our Padaria Prazeres pop-up. It's a perfect example of the playful yet delicious food I love to showcase: a maple-glazed doughnut with a fried egg, crispy bacon, avocado, and hot sauce.

This is the view from the pass, my favorite spot in the house. It captures the essence of what we do: a chef, ready to perform, looking out at the intimate, sunlit stage of our glasshouse before the guests arrive.

This poster for the Second House, Goa pop-up captures the soul of Chef Jyoti Singh's cooking. The vibrant 'Not so Balchao' prawns showcase his ability to create food that is rooted in comfort but influenced by the world.

Our Smoke, Grill & Beer Residency was three weeks of pure energy. This video captures the sizzle of the grill, the focus of the chefs, and some of the most popular dishes, like the Char Siu Pork, that flew out of the kitchen.

As evening falls, the glasshouse transforms. The soft glow of candlelight creates an intimate, almost magical atmosphere for our dinner services, turning a meal into a quiet, unforgettable memory.

The connection between a chef and their food is personal. Here, Chef Goku puts the finishing touches on a dish from his 'Mango Forward' menu, a pop-up that explored the mango's global story from peel to seed.

The perfect cheese pull from a smashed Poee sandwich at our pop-up with Chef Rhea Aaron. It's this kind of comforting, messy, and utterly delicious food that makes our more casual 'Shop' events so special.

This is what happens when culinary worlds collide. For our 'Beyond Bangla' residency, Chef Auroni Mookerjee created this Bannur Lamb Ravioli, wrapping tender lamb in delicate pasta and serving it in a rich bone marrow jhol.

Is it a banana? This dessert from The Korean Shop by Chef Goku was the showstopper. A hyper-realistic banana milk mousse with brown sugar caramel and coffee ice cream that played with perception and delighted our guests.

Because we host limited-run residencies instead of a permanent menu, these experiences fill up within days of being announced. You are not just booking a table, you are securing a seat for a one-off food performance where the chef often explains the narrative behind each course.

At The Conservatory, I operate less like a standard restaurant and more like a stage for culinary exploration. Located in Shanti Nagar, our glasshouse venue is designed to bring you face-to-face with the craft, the hustle, and the creativity behind the food you eat. We do not have a static menu. Instead, I open the space to visiting chefs who bring their distinct philosophies, whether it is a deep dive into Japanese fermentation, a nostalgic return to Goan comfort food, or a study of forgotten regional grains.

Each residency lasts for a short duration, allowing chefs the freedom to create menus that would be impossible in a traditional restaurant setting. You might find yourself sharing a long table with strangers who become friends, watching the plating happen just a few feet away, or listening to a chef share the heritage behind a specific ingredient.

For those interested in the finer details, we typically offer two tiers of experiences. The Tasting Menu is a structured 7-10 course meal that demands your full attention, while our residency pop-ups offer a more relaxed, a la carte style setting. Because of the nature of these one-off events, dietary substitutions can be difficult to accommodate without advance notice. I recommend checking the specific event page for booking details, as seating is strictly limited to ensure the intimacy of the experience.
