About Our Famous Khatti Meethi Mango Chutney
Unlike store-bought versions that are often just a smooth, uniform paste, I julienne the mangoes into thin, distinct strips. This gives every spoonful that perfect, slightly chewy texture that holds the syrupy jaggery and spice mix so much better, making it the ideal partner for your morning parathas or rice.
Making this chutney is a labour of love that takes me back to my own childhood kitchen. I specifically select fresh Ramkela mangoes for their firm texture, which stays even after hours of slow-cooking. I simmer them in a thick blend of sugar and jaggery until the syrup coats every piece perfectly, creating that classic 'khatti meethi' (sweet and sour) punch.
The real magic is in the blend of spices. I add generous amounts of whole fennel seeds (saunf) and nigella seeds (kalonji) to give it an authentic, traditional flavour profile. Because I do not use any artificial chemicals or preservatives, you get the pure, honest taste of fruit rather than just overpowering sweetness.
