This is my Signature Mango Palette, a curated exploration of summer's golden fruit. It features four distinct mini entremets, from the raspberry-kissed Mango Blush to the earthy Mango Matcha, each showing a different facet of this incredible ingredient.
I call this one Midnight Sun. It is an unapologetically decadent composition of silky caramel and bold couverture chocolate. Each layer is designed to be a slow, intense, and deeply comforting experience.
Here you can see the heart of my craft. This cross section reveals the delicate layers of berry compote, light mousse, and soft sponge, all working in harmony. Flavours that whisper, textures that linger.

I believe what you put in is what you get out. Here, I am gently whisking real couverture chocolate, never compound. This is the foundation of the rich, complex flavour you taste in every chocolate creation.
This is my Coco Loco entremet, a cross section of summer's wildest flavour fling. It brings together the tang of pineapple and passionfruit with the creaminess of coconut and white chocolate, all wrapped in a light vanilla mousse.

When you choose an entremet from this collection, you are tasting layers, including sponge, crunchy feuilletine, mousse, and compote, that have been balanced to linger. I work exclusively with real couverture chocolate, never compound, because the foundation of a great dessert is the quality of what goes into it.
The art of the entremet is all about the reveal. Unlike standard cakes, these are multi-layered compositions where texture is just as important as taste. I build them with a specific progression in mind: a crisp base to anchor the experience, a soft sponge, a bright, fruit-forward compote, and an aerated mousse that ties everything together under a mirror glaze or velvet finish.
My process is deliberate and slow. I do not follow trends, I follow the ingredient. If it is mango season, the box focuses on the contrast between tart raspberry and creamy mango. If it is a chocolate box, I am looking for that deep, slow-melt profile that only high-quality couverture chocolate can provide.
