A seasonal celebration of mango in its most refined forms. From the spicy Mango Mambo to the delicate Mango Blush, I design each entremet to capture the essence of summer in every bite.

My Summer Favourites Box is a thoughtfully portioned tasting experience. It's a curated collection of all four of my mango delights, each presented as a beautiful mini entremet.

I am holding my Mango Mambo mini entremet. It is a composition of ripe mango mousse, a hint of passionfruit for zing, and a surprising spark of chilli and lime to lift the flavour into something truly vibrant.

This is a look inside the Mango Mambo. You can see the layers of vanilla mousse, a bright mango chilli compote, and a textured coconut dacquoise base. It is fire dressed fine.

The Mango Blush entremet is a play of juicy mango and punchy raspberry. The cross section shows how they are swirled into an airy white chocolate mousse and set on a soft vanilla sponge.

Here I am presenting the Matcha Manza. Mango brings the sunshine, matcha brings the zen. Together, they are a delicious and unexpected match made in dessert heaven.

My Matcha Manza entremet sits on a beautiful marble stand. It features a fresh mango compote and mascarpone cream on a matcha sponge, with a white chocolate crunch and matcha mousse.

The Mango Blush entremet is irresistibly vibrant. It combines luscious mango and tangy raspberry in a white chocolate mousse over vanilla sponge, topped with Valrhona raspberry ganache.

This is La Mangue Royale, a refined tropical indulgence. It features a lush mango compote and vanilla mascarpone mousse, layered with soft sponge and a buttery crumble for texture.

My Mango Mambo entremet, seen here, is bold, bright, and beautiful. It is built with a spicy mango salsa and passionfruit crémeux on a coconut dacquoise base, finished with a silky vanilla mousse.

This video is a farewell to my seasonal mango entremets. It showcases the beautiful forms of La Mangue Royale and Mango Mambo, a final glimpse of summer's taste before it's gone.

About The Summer Mango Collection

When you choose a box from this collection, you receive four distinct mini entremets, each designed to highlight a different facet of the fruit. I handle the entire process, from sourcing the ripest seasonal mangoes to hand-finishing the mirror glaze, ensuring that every element—from the zesty chilli compote in the Mango Mambo to the smooth mascarpone in La Mangue Royale—maintains its intended texture. Because everything is made to order without preservatives, these boxes are best enjoyed on the day they arrive, so please plan your delivery accordingly.

The challenge with mango is its high water content, which often leads to soggy desserts. To solve this, I build my mango entremets with a focus on structural integrity and contrasting textures. Each piece features a multi-layered construction: a stable sponge base, a crunchy feuilletine or dacquoise layer, an aerated mousse, and a liquid centre. This allows the mango to shine without compromising the pastry.

My signature combinations explore the fruit beyond its natural sweetness. In the Mango Mambo, for instance, I pair mango mousse with a hint of passionfruit and a spark of chilli to cut through the richness. The Mango Blush balances the tropical fruit with the tartness of raspberry, layered over a white chocolate mousse and soft vanilla sponge. Each piece is finished with either a high-gloss mirror glaze or a matte cocoa butter velvet spray, ensuring the visual presentation matches the intensity of the flavour.
