About Gourmet & Signature Flavors
Every cake here, whether it is the Matchamisu or the Hazelnut Praline, uses a specific balance of textures, like the crunch of a house-made praline against a smooth ganache. When you choose a signature flavor, you are getting the version of the recipe I have spent months perfecting, not a generic base cake with a different syrup.
I believe that dessert should be an experience, not just a sugary afterthought. My signature line is where I get to experiment with ingredients that genuinely excite me, moving away from standard bakery staples to something more intentional.
Why These Flavors?
- Matchamisu & Matcha Raspberry: I wanted to bridge the gap between traditional Japanese tea culture and classic dessert comfort. The matcha I use is high-quality, providing an earthy, vegetal depth that pairs perfectly with the tartness of raspberry compote or the creamy finish of mascarpone.
- Reimagined Black Forest: Too often, this classic is just a mass-produced, overly sweet item. I have stripped it back, using a rich chocolate mousse, whipped mascarpone, and an in-house cherry compote to bring out the tart, deep flavor of real cherries, not syrupy substitutes.
- Hazelnut Praline: This is for those who love nutty, complex profiles. It combines a moist chocolate sponge with layers of crunchy, caramelized hazelnut, finished with a velvet-smooth ganache.
