When you book my seafood counter, the key is the freshness. I bring the fish, whether it is Surmai, Pomfret, or prawns, marinated in my signature coastal spices, and we cook it live on a large tawa. You do not get pre-cooked, lukewarm fish here. You get sizzling, crispy portions served directly from the pan to your guests’ plates, which is the only way to do it right.
Seafood is a delicate category. It needs to be fresh, and it needs to be served fast. That is why I do not just dump pre-made platters on a table. My live station concept is built around interaction. When a guest walks up to the counter, they are choosing their catch and watching it hit the sizzling tawa.
