When I moved from dentistry to baking, my goal was simple: to create centerpieces that people actually want to eat, not just look at. That is why you won't find layers of heavy fondant on my cakes. I use a silky Belgian chocolate ganache that provides a clean, modern finish and a depth of flavour that stays consistent from Borivali to Thane.
