I trade heavy sugar paste for Swiss Meringue Buttercream or rich Chocolate Ganache to get those sharp, clean edges. Because I bake from scratch without premixes, you can actually taste the quality of the sponge, not just the sugar. If you need a specific design element, I can usually incorporate it with edible accents or toppers rather than wrapping the whole thing in fondant.
When I started the studio, I made a simple rule for myself: if I would not enjoy eating it, I would not send it out to you. That is why my focus remains on these simple, elegant designs. By skipping the thick fondant covering, I can invest more in the quality of the sponge and the richness of the filling.
