Signature Fusion Buffet & Live Counters
Food & Drink Highlights
- Welcome Bar: Live Mocktail counter serving 2 to 3 varieties like Virgin Mojito or Blue Lagoon in mason jars. Includes Badam Milk in earthen kulhads.
- Mobile Starters: 4 to 5 varieties of pass-around appetizers including signature Muruku Sandwich, Pav Bhaji Shots, Cheese Corn Nuggets, and Harabhara Kababs.
- Live Stations: 2 on-site counters such as hygienic Pani Puri Chaat counter or Live Tawa counter for Idly/Coin Pizza.
- Mains: Live Tandoor breads (Naan/Kulcha), 2 Premium Curries (Paneer/Veg), Dal Makhani, Flavored Rice, and Salad display.
- Dessert: 2 Indian Sweets plus a Live Turkish Ice Cream counter with entertainment.
Setup & Service
- Presentation: Royal theme layout using gold-plated or brass-look chafing dishes with warm LED focus lighting.
- Staffing: Uniformed waiters in waistcoats and gloves at an approximate 1:25 staff-to-guest ratio.
- Dining Ware: Premium melamine or ceramic plates, stainless steel cutlery, and branded paper napkins.

The Menu Sequence
- Top Half: Salt, Pickle, Kosambari (Moong dal salad), Palya (Poriyal), Gojju, and Papad served in traditional order.
- Sweets: Traditional Holige (Obbattu) served hot with Ghee, plus one additional sweet like Mysore Pak.
- Mains: Bisibelebath or Puliyogare, followed by Steamed White Rice with Sambar, Rasam, and Majjige (Buttermilk).
- Savory Side: Vada or Bonda.
Service Format
- Setup: Fresh large-cut Plantain (Banana) Leaf placed on dining tables over disposable rolls or cloth linen.
- Staff: Servers trained in traditional etiquette (serving order from salt to sweet).
- Hygiene: Includes 200ml sealed water bottles and immediate waste clearance.

- Furniture: Traditional low-seating arrangement using individual Chowkis (low tables) with cushion seating.
- Tableware: Signature Royal Gold Thali set featuring a heavy brass/gold-coated large plate, 4 to 5 matching katoris, dessert spoon, and tumbler.
Menu & Service
- Service Style: Synchronized Pangat style where uniformed servers move in rows to serve guests simultaneously.
- Staffing: High-touch service with 1 server for every 8 to 10 guests to ensure immediate refills.
- Course Service: Welcome drink and starters served upon seating. Unlimited main course service including Phulka/Poori, 2 rich vegetable gravies, and rice varieties.
- Closing: Includes Paan (Beeda) and bottled mineral water served into gold tumblers.
