About this collection
This anthology moves away from strict recipe instructions. Instead, it invites you to experience the stories and 'andaaze se' (by estimation) measurements that define real home cooking. With QR codes linking to audio memories, it captures the actual voices of the people who shaped these dishes, making it a companion for those who value tradition over perfect metrics.
While most cookbooks focus on results, this project focuses on the people. It began as a small postcard exchange during lockdown and blossomed into a massive collaborative effort between Nivaala and The Alipore Post. We reached out to kitchens across the globe to gather personal essays, poems, artwork, and photo essays that celebrate the emotional spectrum of eating.
Inside, you will not find cold, rigid instructions. You will find family histories, the comfort of a rainy day meal, and the distinct 'kaimanam' (that special touch of love) that gives a dish its identity. It is designed to be savored in small portions, much like a slow-cooked meal.

I started Nivaala because I lost my mother's recipes and realized how quickly these stories can vanish. This anthology is my effort to make sure that no one else has to feel that same void, helping us all hold onto the voices and flavors that define our past.
