A lot of people ask how I keep tall cakes stable. It is not just about the sponge. For double barrel or sculpted designs, I use a combination of internal supports and specialized doweling that lets me stack height without sacrificing structural integrity. When you see those sharp, clean edges on my ganache finish, that is the result of letting the cake set for hours in the fridge before the final wrap, not rushing the process.
Making a cake is equal parts baking and engineering. My process begins with a consultation where we figure out the physics of your request. If you want a gravity-defying theme or a tall, multi-tier design, I have to plan the internal armature days in advance.
Why the Process Matters
- Stability: Because I work with fresh ingredients, I avoid excessive preservatives. This means the structure needs to be solid. I use MDF bases and food-safe threaded rods for large-scale designs to ensure the cake stays standing during transport and the party.
- Precision: Whether it is a hand-painted portrait or a fondant character, I spend hours on the detailing. This is why I ask for at least 3 to 5 days of notice. I need time to sculpt, let parts dry, and paint.
- Climate Control: Bengaluru weather can be unpredictable. I adjust my buttercream recipes and fondant handling based on humidity levels to make sure the finish stays sharp and does not melt or bulge.
