When I'm sculpting a fondant figure or layering a whole wheat cake, I’m not just following a recipe, I’m solving a puzzle. My healthy whole wheat jaggery cakes are a labor of love, requiring precise temperature control to get that perfect texture without refined flour. It’s my way of proving that you don't need compromises to enjoy a treat that feels just as indulgent as a classic cake.
My journey with baking started on a computer screen playing games, and today, it’s my full-time pursuit. The artistic side of my work involves hand-sculpting toppers and intricate stenciling. I even took my skills to the national stage at Cakeology in Mumbai, where I won a medal for my fondant work. That experience taught me how to push the boundaries of what eggless buttercream and fondant can do.
