Our seasonal menu is fleeting by design. We only source fruit when it is at its peak ripeness, which means our signature Mango Tres Leches or fresh strawberry bakes are only available when the local harvest is at its best. If you see it on our feed, grab it, because once the season shifts, these recipes go back into our vault until next year.
For us, baking with the seasons is not just a trend, it is the only way to get real flavor. When you walk into our studio, you will not find strawberries in the heat of May or mangoes in December. We believe that fruit tastes best when it is picked at the right time, and we adjust our kitchen rhythm accordingly.
The Rhythm of Our Kitchen
Throughout the year, our ovens follow the calendar. In the height of summer, our kitchen fills with the scent of fresh mangoes for our Tres Leches and fruit-topped sponge cakes.
