About A Taste of India: Our Regional Flavours

I do not use machines to chop vegetables. It sounds inefficient, but when you hand-cut ingredients, the texture stays intact. This slow, manual process is why our sun-dried pickles have a distinct crunch instead of the mushy texture you get with factory-made options.

Regional flavours are not just about ingredients, they are about memories. When we make our Gujarati Chhunda, we follow the exact same sun-drying method my dadi used. It takes days, but there is no other way to get that perfect balance of sweet and tangy.

Here is what goes into our regional collection:

  • Western India: Our Gujarati Chhunda and Maharashtrian Thecha are staples, made without artificial preservatives or colours.

We are transparent about our journey. Sometimes production gets delayed because the sun didn't cooperate or the raw mangoes were not ripe enough. That is honest food.
