Why the lead time? Sponges need to rest to achieve the right texture. Frosting must set in stages to ensure sharp edges and smooth finishes. When we take on a kinetic or structural project, like our rotating or levitating cakes, we are essentially doing light engineering. We use custom armatures and internal supports, which require stability testing before anything gets packed.
Our French entremets require a completely different set of skills, focusing on precise layering and temperature control rather than sculpting. Whether it is a simple birthday cake or a massive corporate launch order, we apply the same rigorous quality checks.
