I prefer working with smooth buttercream rather than heavy fondant to get that polished look, whether it involves vintage piping, fresh flowers, or custom gold-leaf accents. It is all about balance—a cake that acts as a centerpiece but still tastes like the real deal when you cut into it.
When you are planning a milestone birthday, the cake usually anchors the entire party. My focus for these designs is on the finish. I use tall barrel structures—typically 4 to 5 inches high—because they create a commanding presence in photos and on your dessert table.
Design Choices: I am not a fan of heavy fondant. Instead, I specialize in Swiss Meringue and American Buttercream.
