My team manages the traditional 'pankti' (row) service with rhythmic, sequential timing so that your guests are served piping hot rice and sambar exactly when they are seated, not a minute before or after. Whether it is a small family housewarming or a large wedding, I personally oversee the serving pace to ensure nobody is left waiting with an empty leaf.
The Authentic Oota Experience
A true Karnataka Oota is about more than just the taste. It is about the sequence—the way the salt, pickle, and kosambari are placed first, followed by the palyas, and finally the piping hot rice and sambar. I stick to these roots. My signature banana leaf spread includes a 14-item menu that is carefully paced to ensure your guests enjoy every bite, from the first spoon of rice to the final payasa.
What You Get on the Leaf
- The Staples: Fresh banana leaves, paper rolls for a neat look, and 250ml mineral water bottles for every guest.
- The Spread: We start with authentic kosambari and two types of palya. The main course features steamed rice, traditional sambar, rasam, and thick curd, perfectly paired with papad.
- The Sweet Finish: My personal favorite to include is the 50-50 holige or a classic Mysore Pak, followed by a liquid sweet like payasa.
How I Work
I handle the end-to-end logistics. This means you do not have to worry about vessel rentals, shamiyana setup, or the post-meal cleanup of leaves. My team arrives early, sets up the dining area, and ensures the service is quick and professional.
