About Our Famous Sate Babi (Pork Satay)
You might notice our stall often has a queue before we even start. That is because we do not batch cook hours ahead. We use large, hand-cut chunks of pork belly and shoulder marinated in our signature sweet Kecap Manis glaze, then throw them on the charcoal grill the moment you order. You get that smoky, charred flavour on the outside, while the inside stays juicy and tender.
Why do people line up for our Sate Babi? It comes down to the basics of Indonesian street food: fresh ingredients and high heat. We source quality pork shoulder and belly, cutting them into large pieces—we call it empuk gede—to ensure the meat retains moisture. Many places use electric grills or pre-cooked meat to save time, but we stick to live charcoal. It adds a distinct smokiness that you cannot fake.
We serve each portion with raw red shallots, bird's eye chilies, and a squeeze of lime to cut through the richness of the pork. It is the perfect grab-and-go meal when you are wandering through a bazaar.
Because we only serve food hot off the grill, our capacity is limited by our cooking speed. That is why we frequently see the 'SOLD OUT' sign go up before the event ends. If you see us at a festival in Surabaya, come early. We hate turning people away, but when the grill is empty, we are out for the day.
