The Bowl Components
- Base: Steamed Jasmine/White Rice (approx. 150g to 180g).
- Protein: Choice of Iga Pedas (2 to 3 bone-in beef ribs), Empal (Sweet & Spicy Beef slices), or Nasi Bali Mix (Pork & Veg).
- Heat Level: Signature 'Petir' (Lightning) spicy sambal paste.
Accompaniments
- Egg: 1 Whole hard-boiled egg (lightly fried or sauce-coated).
- Crunch: 1 Large Indonesian Prawn/Fish Cracker (Kerupuk).
- Garnish: Fried shallots and cucumber slices.

- Container: 500ml premium paper bowl with banana leaf base liner.
- Cutlery: Disposable wooden spoon included.
Charcoal Grilled Pork Satay (Sate Babi)
The Skewers

- Meat: Large 1 inch chunks of Pork (Shoulder/Belly mix).
- Glaze: Thick Indonesian Sweet Soy Sauce (Kecap Manis), caramelized over open fire.
- Method: Freshly grilled on charcoal for smoky flavor.

- Plating: Served on a banana leaf in a paper boat or tray.

We’re Big Daddy’s Kitchen, and honestly, we just love bringing uenak soro (crazy good) Indonesian festival street food to events all over Surabaya. If you spot our pop-up food stall Surabaya at a bazaar, odds are there’s a crowd, and people are talking about our dishes.
What’s on the Table
- Sate Babi (Pork Satay): Non-halal, juicy, and empuk gede (tender, big) skewers. This is the dish folks queue for – if you like spice, you’ll love it.
- Nasi Bali Daging Pedas: Spicy Balinese rice bowl, loaded with meat. People call it yahud (awesome) and it’s perfect for eating as you wander around.
- Iga Pedas (Lightning Ribs): These ribs bite back – spicy and always in high demand, we refill our pot all day.
- Bakwan Goreng: Crunchy fried snack, easy to grab and go.
How We Roll
We don’t have a permanent shop – we set up wherever the festival takes us. Our kitchen is mobile, and we only serve food fresh and hot. We’re proud to be a spicy pork satay vendor, and most dishes here are non-halal.
