No Kerala feast is complete without a serving of rich, creamy payasam. I slow-cook my desserts using traditional methods, whether it's the jaggery-based Ada Pradhaman or the milky Palada Payasam. I also love adding a surprise twist, like the iconic Calicut Halwa.
