My food is inspired by the Kerala Syrian Christian cooking I grew up with, learning from my Amma and grandmother. I use these time-tested family recipes and nostalgic memories as the foundation to create unique, soulful menus that tell a story, whether it's pure Mallu classics or continental dishes with a desi touch.

The Art of Kerala Cooking: From Scratch

I believe in doing things the old-fashioned way because it simply tastes better. I teach kitchen teams how to make everything from scratch, from hand-grinding spice mixes to fermenting the perfect appam batter, ensuring every dish has an authentic, homemade foundation.
