I build these entremets around the best seasonal fruits, balancing their natural sweetness and tartness. Discover creations featuring tropical mango and passionfruit, bright citrus, and delicate berries, all layered with light mousses and complementary textures.

Here, I take inspiration from beloved dessert profiles and reinterpret them with French patisserie techniques. This collection includes my take on the rich, coffee-soaked Tiramisu and the iconic Forêt Noire (Black Forest).
