They are the actual blueprints I use to design my seasonal menus and café layouts. When you see a drawing of a croissant on my counter, it is a direct reflection of the Parisian techniques I use in my kitchen to ensure every bake is consistent. My approach to the café is simple: keep it real and keep it fresh. When I started Zed The Baker in 2018, I wanted to strip away the pretense of high-end dining and replace it with the honest comfort of a neighborhood bakery. These illustrations capture that philosophy. They are my way of documenting the journey—from the first pour of an Arabica blend to the evening transition where my Indiranagar space turns into a steakhouse. Whether you are browsing through my designs for a new pastry release or looking for the perfect setting for a morning coffee, you will find that the physical café matches these drawings. I rely on high-quality ingredients, like Kegg Farms eggs and Seven Beans coffee, to turn these sketched ideas into reality.
