When you order one of these, you are getting a cake that balances a light, airy base with seasonal toppings like fresh mango, kiwi, or dragon fruit, all finished with a smooth fresh cream or a clean mirror glaze. For these lighter cakes, the goal is simple: fresh, vibrant flavors that satisfy your cravings without weighing you down. I use my training to ensure the sponge is moist and the cream is light, never cloying or overly sweet. Whether it is a classic Pineapple cake with real fruit chunks or my signature Tres Leches, the focus is on quality ingredients—no artificial syrups, just the real deal. ### What makes these cakes work * **Real Fruit:** I use seasonal picks like fresh mangoes, blueberries, and dragon fruit, layered in and piled on top. * **Technique:** I apply a mirror glaze or a semi-naked frosting to keep the aesthetic clean, letting the fruit be the star of the show. * **Texture Balance:** From the crunch of toasted almond flakes on the sides to the soft, melt-in-the-mouth crumb of a Tres Leches, every layer is designed to complement the fruit. I deliver these across Delhi NCR from my kitchen in Lajpat Nagar. Because these cakes rely on peak-season produce, I recommend booking ahead so I can source the best fruit for your specific date. ## About Xtraordinary I'm Anchal. After training at Le Cordon Bleu, I realized the best desserts don't need to be covered in sugar paste. I love playing with fresh fruit, textures, and classic techniques to make something that feels light but tastes indulgent.
