When a limited edition appears, it means we have sourced a specific seasonal ingredient or perfected a technique like the chocolate cascade pull-up. Once that run finishes, it disappears to make room for our next idea. We approach our limited drops as transient art rather than just menu items. Because we work in small batches, these creations often depend on the quality of specific ingredients we find or the time we have to experiment with new textures. ### Why These Drops Matter When we release a limited run, we are sharing a piece of our current inspiration. Whether it is a seasonal fruit from a local market or a new way to layer textures in a dessert tub, we prioritize freshness and novelty. These items typically stay on the menu for only a few days or until the ingredients run out, making them a true 'catch it while you can' experience for our patrons in Bandra and Andheri. ### The Process We do not work with templates. Every limited drop requires us to reset our kitchen process to ensure the balance of flavor and presentation remains consistent with the Toujours standard. You might find a dessert that uses a warm ganache pour or a specific crumble base that we do not use in our daily offerings. If you see something here that captures your interest, we recommend reaching out immediately. Our production numbers are kept intentionally low to maintain quality, and we often sell out before the night ends. These treats are our way of bringing a little unexpected joy to your evening routine, rooted in the same traditions my mother established in 1985. ## About Toujours We grew up with flour on our noses and the smell of cakes everywhere, learning from our founder Alpa.
