We require a 48-hour window for most custom orders to ensure we source the ripest mangoes or strawberries at their peak, so please reach out a few days early if you have a specific date in mind. Our seasonal menu is dictated entirely by Mumbai's markets. When you order a Mango Cheesecake or a Strawberry Tart from us, you are not getting something made with synthetic essences or frozen pulp. We source our Alphonso mangoes and strawberries from local farms only when they are at their absolute peak of sweetness. Because we do not rely on mass-production techniques, our process is entirely manual. For our strawberry cakes, we layer the sponge with fresh berry cream and hand-arrange the fruit, ensuring every slice is as beautiful as it is balanced. For our mango creations, we focus on the perfect contrast, pairing the natural tartness of the fruit against our rich Swiss Meringue Buttercream or Belgian chocolate ganache. We believe that seasonality is a form of luxury. It means waiting for the right moment. Whether it is a delicate fruit tart for a weekend gathering or a larger showstopper for a milestone, we treat each ingredient with the respect it needs to shine. If you have a specific celebration during the mango or strawberry months, let us know a few days before. This allows us to select the best fruit for your order, ensuring the quality remains high and the flavours stay honest. ## About Toujours Toujours is not just a bakery, it is a family legacy Mum Alpa and I started back in 1985. We view every seasonal fruit, be it the first mango of summer or the winter's best strawberry, as the start of a story that we handcraft just for you.
