After six failed attempts and plenty of sleepless nights in my kitchen, I’ve finally cracked the code to these crisp, chewy little bites. ## Photos and videos - [Video: My journey with macarons has been a long one. Because macarons are so temperamental—humidity, oven temperature, and almond flour quality all change the outcome—I bake them in limited quantities to ensure those perfect, airy 'feet' and the right chewy center. If you’re planning a dessert table for an event, reach out a few days early so I can schedule the bake for your specific delivery slot. Let’s be honest: macarons are the divas of the baking world. One humid day in Mumbai can ruin a whole batch before it even hits the oven. That’s why I don’t keep ready stock sitting on a shelf. When you place an order, I check the weather, prep the almond flour mix, and get to piping. The result is that signature thin, crisp shell and a soft, chewy center that hits the spot every time. ### Why my macarons are different I spent months journaling every failure—the cracked shells, the hollow centers, the ones that just wouldn't set. I finally learned that the secret isn't just in the recipe, it’s in the process. - **Small Batches Only:** Because I bake these at home, I keep the quantity small so I can monitor every single shell. - **Freshness First:** I bake these fresh for your order, so they arrive with the right texture, not hard or stale. - **Customizable:** Need a specific color or flavor theme for a party or a gift box? Let me know. Since I’m doing this in my mom’s kitchen, I have the flexibility to adjust the look to fit your vibe. ### How to order Because of the effort that goes into each batch, I usually bake these late at night when the kitchen is quiet and the temperature is cooler—which is actually the secret to getting that perfect, distinct 'foot' on the macaron shell. If you need these for a birthday, anniversary, or just a Tuesday craving, shoot me a message at least 48 hours in advance so I can clear my student schedule and get baking. ## About Minervy by Riya More I’m Riya, a student by day and a midnight baker. I don't just bake; I obsess over details, like finally getting my macaron shells just right after months of 'macaron nightmares' in my mom’s kitchen. When you order from me, you’re getting a batch that was likely cooling on my counter just hours before it reached you.
